homemade chicken noodle soup

last night i made homemade chicken noodle soup, and it was amazing! i orginally found the recipe on allrecipes.com, and of course read the reviews {thanks kendall porter} to change it up a bit!

here i what i did:
  • in a large pot on medium heat, melt 1 tablespoon butter
  • add 1 yellow onion (chopped), 1/2 cup chopped celery, 1 cup sliced carrots and some garlic. cook for about 5 minutes.
  • meanwhile, cook noodles according to the package in a separate pot. it called for egg noodles, but i decided to use the bowtie pasta i already had, and i was so fun and different! it also made it look fancy!
  • to the pot with the veggies, add uncooked chopped chicken breast (use as much as you want), 4 (14.5 oz) cans chicken broth, 1 (14.5) can vegetable broth to the pot. bring to a boil.
  • add basil, oregano, fresh thyme, italian seasoning and salt + pepper to the pot; cover and simmer for 2o minutes.
  • add pasta and simmer for about 5 more minutes

i wish i would have taken a picture, but trust me, this soup is fantastic and so easy to make! i bet you have all the ingredients right now to make it!

i also served a wedge salad with homemade blue cheese dressing!

perfect for a chilly colorado evening!
