but, we forgot to take pictures the first two nights! wednesday night, we headed over to cherry creek north and had street tacos at a cute restaurant called machete! it was delicious and the perfect dinner to start the trip!
thursday, we took the girls on a walk, got coffee at our favorite neighborhood joint: st. marks. then we headed to get pedicures!! those were much needed! while we were at work, mom was preparing a most fabulous dinner for us: beef bourguignon! it was absolutely amazing and we felt like we were in the movie julie & julia! we completely forgot to take a photo. it was gone quick because it was seriously one of the best meals i have ever had in my life!
friday after work, we walked down to okinawa, the sushi restaurant just down the street from us! we had fantastic sushi and mom had her first sapporo!
we ordered WAY TOO MUCH FOOD! this was part II! part 1 was tempura veggies and spring rolls. for dinner we had pork buns, prime rib sliders and a huge bowl of pho! soooo tasty!!

that night, we had a cuddle session with fin!
and game day brought on a photoshoot with aric & fin in her ou bandana!
saturday afternoon, we took the top of aric's jeep and headed west on 1-70 to the mountains to look for some fall foliage!! it was a tad chilly in the jeep. and very windy!
so beautiful!
to all my sooner fans: aric bought the OU for his car on his own! i didn't even know he ordered it! i'm a proud sooner!
sunday morning, we headed down to highlands ranch to watch brittany & james lee's daughter and my goddaughter, rebecca, get baptized {photos to come soon}.
it was a lovely service and a wonderful brunch at their house after!
that afternoon, we decided it was time to get pumpkins! my favorite is the warty one! i think i'm going to have to move these to our front door because the squirrels keep biting them during the day!! ugh.
sunday night, it was time to cook again! we made a fabulous white bean soup with pancetta i found randomly online and kale chips. people - you must make kale chips! they are the most wonderful side dish and so good for you! just get a head of kale, cut into small pieces, drizzle olive oil on top and sprinkle sea salt on top and bake at 350 for 10-15 min! it will not disappoint!

oh - i also made homemade pumpkin butter! i will no longer buy the expensive jar from williams-sonoma! if you want my recipe - let me know and i'll pass along. this is seriously so good and you will want to eat it on EVERYTHING!

while i was at work monday, mom gave finley her birthday present! you can see how excited the girls were - they are a blur down the hall!
and 5 minutes later, its torn up. mom said it was totally worth it, but next time she should just give fin a $5 bill and have her tear it up. haha
one of our favorite places to eat on mondays is parallel 17, a modern vietnamese restaurant just around the corner from our house!!
